Black Mole Recipe – Serves 4

  1. 1 lb. Guelaguetza’s black Mole Paste

  2. 2 lbs. red tomatoes – cut in fours

  3. ½ cup of Water

  4. 2 cups chicken broth

  5. ¼ teaspoon salt

  6. 1 tablespoon Oaxacan chocolate (can substitute with brown sugar)

Directions:

Place the tomatoes and water in a pot and place over medium heat. Let the tomatoes sit over medium heat for 20 minutes. After the tomatoes have boiled, pour them into a blender and blend for 10 seconds. Strain the tomatoes back into the pot and add Guelaguetza’s black mole paste. Stir until the paste has fully dissolved. Bring the mole to medium heat. Slowly, add 2 cups of chicken broth. Season with salt, and the Oaxacan chocolate. Stir for another 10 minutes until the mole comes to a boil. You are now ready to serve delicious Guelaguetza black mole!
